Sorry for the trouble, and thanks for the helpĮDIT: Deleting the GamerProfile.xml file completely and starting the game snapped it out of whatever funk it was in and allowed the resolutions to show up in game. I must have assumed that since Eyefinity was supposed to be natively supported by newer versions that I had a version problem and immediately stopped searching for my actual problem.
